Photo Friday: Rural.

My entry for this week's Photo Friday Challenge, Rural. I did actually post this before, in a smaller version of lower quality. Problem is, living in Southern Illinois with a digital camera, I have hundreds of megabites of rural photos. It's a lot to look through, and I just like this one a lot. The photo is of fresh potatoes at the Carbondale Farmers' Market, June 2004. I bought a ton of those potatoes, and yes they are as good as they look.

you cut those up 1/4 of an inch thick, add a bit of veg. oil, fry. After you remove them from the oil, dust with salt, pepper, oregano. Beat 4 eggs, add 4 teaspoons of milk, beat with fork. Heat pan, add a slab of butter, medium-high heat for approx. 3 minutes or until all egg is jelly-like.

Serve.

My saturday morning breakfast, can't beat it with some OJ, toast and perhaps bacon!

Damn, that sounds like a tasty Saturday morning treat! I'll have to skip the bacon, though, and go for the veggie sausage. Morning Star and Boca both make some good ones, but the Morning Star patties are my favorite these days.
